Use low-fat or no-fat beef broth in place of the regular broth to save calories.

To turn this into a hearty meal soup, just add pre-cooked beef, pork, or even chicken. When using chicken, swap chicken broth for the beef broth.

Harvest Soup
Ingredients
8 servings - 124 calories per serving
2.5 grams of fat per serving
3 carrots, finely chopped
1 head cabbage, shredded
2 stalks celery, finely chopped
1 whole white onion, chopped
1 can (28oz) tomatoes with juice
6 cups beef broth
2 tsp black pepper
  • In large cooking pot, combine all ingredients and stir to blend.
  • Cook over high heat until boiling.
  • Reduce heat to low.
  • Cover pot.
  • Simmer 45 minutes.
  • Serve while hot.
