Plum tomatoes are hearty and slightly sweet-tart.  Feel free to use any robust red tomatoes in this recipe in place of plums if you can't get them.
Try using different shaped pastas for interest.

Use fresh chopped basil or oregano instead of the dried herbs.

For just a few extra calories, you can add some chopped bell pepper for extra flavor and texture!

Low fat and delicious
Italian Pasta Salad
Ingredients
12 servings - 175 calories per serving
1 gram fat per serving
1 pkg (16 oz) rotini
1 can (8 oz) tomato sauce
1 cup fat-free Italian dressing
1 tsp dried basil
1 tsp dried oregano
1 cup mushrooms (sliced)
5 plum tomatoes (coarsely chopped)
1 medium red onion (chopped)
1 can (2.25 oz) sliced ripe olives (drained)
  • Cook pasta according to package directions.
  • Drain.
  • Rinse with cold water.
  • In mixing bowl, blend tomato sauce, dressing, basil, and oregano.
  • Add pasta, mushrooms, tomatoes, onion, and olives.
  • Toss gently to blend.
  • Cover.
  • Refrigerate at least 2 hours.
  • Serve chilled.
