When preparing this dish for entertaining, top each serving with a dollop of low-fat whipped topping and a sprinkling of crushed, candied almonds.

| Jamaican Rum Pears |
Ingredients
(4 servings - 7g fat per serving)
|
| 4 medium |
pears (peeled, cored, halved) |
| 1 cup |
corn syrup |
| 1/3 cup |
dark Jamaican rum |
| 1 tbsp |
butter |
| 4 tbsp |
almonds (toasted, slivered) |
| 1 doz |
cherries (with stems) |
|
- Preheat oven to 450 degrees.
- Prepare pears by peeling, coring, and cutting in half.
- Place pears in glass dish.
- Cover pears with water and a dash of lemon juice to keep them from turning dark.
- In a large skillet, combine corn syrup and rum.
- Bring to a boil.
- Boil for 2 minutes.
- Add butter.
- Add pears and reduce heat.
- Simmer over medium-low heat for 10 minutes while carefully turning them and basting with syrup.
- Remove from heat.
- Arrange pears, cut side up, in casserole or other glass baking dish.
- Sprinkle with syrup and almonds.
- Bake for 5 minutes.
- Remove from baking dish and place two pears each into individual dessert dishes.
- Garnish with cherries.
