You can substitute imitation crabmeat, scallops, or even shrimp for the crabmeat in this recipe. Just be sure to get the precooked kinds!
Change this recipe any time by using raspberries in place of strawberries, honeydew in place of cantalope, or flavored yogurt instead of plain. How about lemon?!

| Mediterranean Crab Salad |
Ingredients
4 servings - 200 calories per serving

| 1 cup |
cantalope (cut into bite size pieces) |
| 1 cup |
strawberries (washed, hulled, halved) |
| 1 pkg (6 oz) |
crabmeat |
| 3/4 cup |
celery (sliced) |
| 1/4 cup |
light mayonnaise |
| 1/4 cup |
plain low-fat yogurt |
| 2 tbsp |
fat-free milk |
| 1/2 tsp |
curry powder |
| 4 cups |
torn mixed greens |

- In a large bowl, combine fruit, crabmeat, and celery.
- Set aside.
- In small mixing bowl, blend mayonnaise, yogurt, milk, and curry powder.
- Divide salad greens between four serving plates.
- Top each plate with crabmeat mixture.
- Drizzle each salad with dressing.
- Serve immediately.
