You can replace the frozen vegetables for any fresh vegetables that suit your taste. Try a combination of yellow squash, tomato, and bell peppers!

If you want to keep this dish interesting, use different shaped pastas in place of the straight pasta.

Low fat and delicious
Pasta Primavera
Ingredients
(4 servings - 2.5 grams of fat per serving)
1 pkg (8 oz) angel hair, thin spaghetti, or linguini
1 bag (16 oz) frozen mixed vegetables
1/4 cup water
1 jar (12 oz) fat free chicken gravy
1/2 cup fat free ranch dressing
1/2 tsp black pepper
  • Prepare pasta according to package directions.
  • Drain.
  • Set aside.
  • In large saucepan, cook vegetables in water for 3 minutes.
  • Add gravy, dressing, and pepper.
  • Cook for 1 minute.
  • Pour vegetable mixture over pasta.
  • Toss to coat pasta.
  • Garnish with parmesan cheese, if desired.
