Fresh basil is incredibly full of flavor.  You can grow it yourself in a windowbox garden, or purchase fresh herbs at most supermarkets in the produce aisle.
You can replace the Boboli with any very crusty bread (like a baguette). Just cut into pieces setting aside the majority of the soft bread part for use another time as bread crumbs. You're after the crusty texture and bread flavor, not much of the bread itself.

You can replace the pepperoni with prosciutto, salami, or dried ham, if you'd prefer.

Change this recipe any time by using different salad greens.

Low fat and delicious
Pizza Salad
Ingredients
(4 servings - 10g fat per serving)
3/4 cup fat-free French salad dressing
1 tbsp fresh oregano or fresh basil (chopped)
8 cups Romaine lettuce (torn into bite size pieces)
8-oz pkg Italian bread shells (Boboli) (cut into pieces)
1 cup Canadian bacon or pepperoni (chopped)
1 cup reduced-fat mozzarella cheese
  • In small mixing bowl, combine dressing, basil or oregano, and blend well.
  • In large mixing bowl, toss together lettuce, bread shell pieces, bacon, and cheese.
  • Drizzle dressing over salad mixture.
  • Toss lightly to coat.
  • Serve immediately or refrigerate and serve later.
