If you don't like snow peas, you can substitute water chestnuts, bell peppers, or any other light vegetable with crunch and texture.

Scallops in Black Bean Sauce
Ingredients
4 servings - 125 calories per serving
3g fat per serving
2 medium carrots (julienned)
1/4 lb snow pea pods (julienned)
2 green onions (sliced into 1/4-inch pieces)
1 lb sea or bay scallops
1/4 tsp salt
1/2 cup black bean sauce
4 sprigs fresh cilantro
  • Spray heavy skillet or wok with cooking spray.
  • Heat over medium-high heat until spray begins to bubble.
  • Add carrots, pea pods, onions, and salt.
  • Stir fry 3 minutes.
  • Remove vegetables to large mixing bowl and cover to keep warm.
  • Respray pan with cooking spray.
  • Add scallops.
  • Stir fry 2 minutes.
  • Stir in bean sauce.
  • Heat for 1 minute.
  • Add vegetables to pan.
  • Heat for 1 minute.
  • Remove to four serving plates.
  • Garnish with fresh cilantro.
  • Serve while hot.
