| Scallops in Black Bean Sauce |
Ingredients

carrots (julienned) |
| 1/4 lb |
snow pea pods (julienned) |
| 2 |
green onions (sliced into 1/4-inch pieces) |
| 1 lb |
sea or bay scallops |
| 1/4 tsp |
salt |
| 1/2 cup |
black bean sauce |
| 4 sprigs |
fresh cilantro |

- Spray heavy skillet or wok with cooking spray.
- Heat over medium-high heat until spray begins to bubble.
- Add carrots, pea pods, onions, and salt.
- Stir fry 3 minutes.
- Remove vegetables to large mixing bowl and cover to keep warm.
- Respray pan with cooking spray.
- Add scallops.
- Stir fry 2 minutes.
- Stir in bean sauce.
- Heat for 1 minute.
- Add vegetables to pan.
- Heat for 1 minute.
- Remove to four serving plates.
- Garnish with fresh cilantro.
- Serve while hot.
