| Sea Scallop Stir Fry |
Ingredients

| 1 pkg (3 oz) |
oriental flavor ramen noodles |
| 1 tbsp |
olive oil |
| 3/4 lb |
asparagus (cut into 1-inch pieces) |
| 1 |
red bell pepper (cut into strips) |
| 1 |
onion (finely chopped) |
| 2 cloves |
garlic (finely chopped) |
| 3/4 lb |
sea scallops (cut in half) |
| 1 tbsp |
soy sauce |
| 2 tbsp |
lemon juice |
| 2 tsp |
red pepper oil (or use 1-1/2 tsp vegetable oil and 1/2 tsp cayenne pepper sauce instead) |

- Reserve seasoning packet from noodles.
- Cook and drain noodles according to package directions.
- In large skillet or wok, heat olive oil over high heat.
- Add asparagus, bell pepper, onion, and garlic.
- Stir fry 3 minutes.
- Add scallops.
- Stir fry until white (about 2 minutes).
- In small bowl, mix seasoning packet, soy sauce, lemon juice, and pepper oil.
- Add to scallop mixture.
- Stir in noodles.
- Stir fry for 1 minute.
- Serve while hot.
