Southwestern Corn and Peppers
Ingredients
4 servings - 110 calories per serving
6g fat per serving
1 green bell pepper
1 red bell pepper
1 tbsp olive oil
1 tbsp butter or margerine
1-1/2 cups frozen corn kernels
1/3 cup green onions (finely chopped)
1/4 tsp garlic (finely minced)
1/2 tsp ground cumin
1/2 tsp black pepper
  • Cut peppers into thin strips.
  • In a large skillet, heat olive oil and butter or margerine over medium heat.
  • Add peppers, corn, and onions.
  • Add garlic, cumin, and pepper.
  • Cook for 8 minutes, stirring lightly.
  • Garnish with tomato wedges, if desired.
