Use baby spinach in place of mature spinach.

Try a combination of raspberries and strawberries or exchange kiwi slices for the strawberries for a nice change.

If you don't like pine nuts, use sunflower seeds or crushed cashews instead.

Spinach Berry Salad
Ingredients
6 servings - 115 calories per serving
4 grams of fat per serving
1/4 cup orange juice
1/4 cup honey
2 tbsp vegetable oil
2 tsp dijon mustard
1 pkg (12 oz) spinach (rinsed, dried, cut into bite-size pieces)
1 pint strawberries (washed, sliced)
2/3 cup green onions (sliced)
1/4 cup pine nuts
2 cans (11 oz each) mandarin oranges (drained)
  • In food storage container (like Tupperware), place orange juice, honey, vegetable oil, and mustard.
  • Snap on cover.
  • Shake vigorously to blend ingredients.
  • In large salad or mixing bowl, toss together spinach, berries, onions, pine nuts, and oranges.
  • Pour dressing mixture over vegetable mixture.
  • Toss lightly.
  • Place in refrigerator for 15 minutes to chill.
  • Serve while cold.
