Shitake mushrooms have a unique taste and texture.
If you prefer, use chicken instead of turkey in this recipe.

If you can't find stir fry noodles, you can prepare angel hair pasta or ramen noodles in place of the stir fry noodles.

Oyster sauce is usually available in the Asian food sections of most larger supermarkets, or you can visit your local Asian market and pick it up.

Low fat and delicious
Turkey Lo Mein
Ingredients
4 servings - 20g protein and 7g carbohydrate per serving
110 calories per serving
1g fat per serving
6 dried Shitake mushrooms
1/2 pound fully-cooked, smoked turkey breast (cubed)
1 cup frozen green peas
1 pkg (7oz) fresh, refrigerated stir fry noodles
1 tbsp soy sauce
3/4 cup water
1 tbsp oyster sauce
2 green onions (chopped)
  • Soak mushrooms in hot water until soft (about 20 minutes).
  • Drain and rinse.
  • Press between paper towels to remove excess moisture.
  • Remove and discard stems.
  • Cut caps into thin strips.
  • Spray wok or heavy skillet with non-stick cooking spray.
  • Heat over medium-high heat until spray begins to bubble.
  • Add turkey.
  • Stir fry for 1 minute or until brown.
  • Add mushrooms, peas, soy sauce, water, and oyster sauce.
  • Stir well.
  • Rinse noodles under hot water to separate.
  • Drain.
  • Add to stir fry.
  • Stir fry for 2 minutes.
  • Remove to serving dishes.
  • Sprinkle with green onions.
  • Serve while hot.
