Quick changes for this recipe include replacing the cider vinegar with apple cider vinegar; changing crushed red pepper flakes for the pepper; using a 1/2 tsp of your favorite mustard in place of the dry mustard.

Wilted Lettuce Salad
Ingredients
6 servings - 70 calories per serving
4 g fat per serving
1 head leaf lettuce (torn into pieces)
2 tbsp green onion (chopped)
2 large hard-boiled eggs (chopped)
3 slices bacon (cut into 1/2-inch pieces)
1/4 cup cider vinegar
2 tsp sugar
1/4 tsp salt
1/2 tsp pepper
1/4 tsp dry mustard
  • In large bowl, combine lettuce, onion, and eggs.
  • Set aside.
  • In small skillet, cook bacon until crisp.
  • Add remaining unused ingredients to bacon.
  • Heat until sugar dissolves.
  • Pour hot mixture over lettuce.
  • Toss lightly.
  • Serve immediately.
