Spinach can be purchased pre-washed, trimmed, and ready to use in the prepacked salad section of your supermarket.
You can replace the lemon-pepper seasoning with 1 tbsp grated lemon peel and 2 tbsp black pepper.

Different type of honey have different flavors. Try different ones each time to find the ones you enjoy most.

Wilted Spinach Salad
Ingredients
4 servings - 210 calories per serving
5g fat per serving
1 lb orange roughy, sea bass, or salmon fillets
1 tbsp lemon-pepper seasoning
4 slices bacon
1 small red onion (sliced, separated into rings)
2 tbsp dry sherry
2 tbsp honey
8 cups fresh spinach or baby spinach (torn into pieces)
  • If fish is frozen, thaw by placing in colander under cold running water for several minutes until thawed.  Be sure to carefully separate fillets during thawing to prevent frozen patches.
  • Rinse fish and pat dry with paper towels.
  • Arrange fish in a microwave-safe dish.
  • If fillets have thin edges, tuck them under.
  • Sprinkle fish with lemon-pepper seasoning.
  • Microwave on high power until fish is opaque and flakes easily with a fork (approximately 3-7 minutes).
  • In large skillet, cook bacon over medium heat until crisp.
  • Drain bacon, reserving drippings in skillet.
  • Crumble bacon and set aside.
  • Add onion to the drippings and cook, stirring constantly, over medium heat until tender.
  • Stir in sherry and honey.
  • Bring to boiling.
  • Remove from heat.
  • In large bowl, toss together spinach and bacon.
  • Pour skillet mixture over spinach.
  • Toss lightly to coat.
  • Divide spinach mixture between four serving plates.
  • Arrange fish filets on top.
  • Serve immediately.
